Heirloom tomato, peach, and burrata salad
Ingredients:
- 3 Tbsp. extra-virgin olive oil
- 3 Tbsp. white wine vinegar
- 2 tsp. honey
- Kosher salt
- 3 ripe peaches, cut into wedges
- 2-3 large ripe heirloom tomatoes, sliced
- 1 8-oz. ball of burrata, torn into large pieces
- Generous handful of arugula, if desired
- Basil leaves, for serving
- Flaky sea salt
A few notes on making this:
- This makes perfect use of summer tomatoes and peaches. Their tart, juicy flavors pair perfectly with creamy burrata.
- Do not refrigerate tomatoes as it will ruin their flavor and texture.
- Add arugula for more substance, or grilled sourdough for tartines.
Directions:
- To make dressing, add olive oil, white wine vinegar, honey and 1-2 tsp kosher salt to a measuring cup or jam jar and whisk or shake vigorously to combine.
- Cut tomatoes and peaches into wedges and arrange on serving platter.
- Cut or tear burrata into pieces and place between peaches and tomatoes.
- Drizzle with dressing and sprinkle with flaky sea salt and basil leaves.
- Enjoy!
